SWEET AND SOUR PORK Ingredients 1 Tablespoon Olive oil 500g Lean Pork, diced 1 Onion, sliced 2 cloves of garlic, crushed 1-2cm Knob Ginger, thinly sliced 1 Capsicum, sliced 225g can Pineapple Pieces in juice 2 Tablespoons soy sauce 1 Tablespoon rice wine vinegar 2 Teaspoons Chinese 5 Spice Step 1 Heat Pressure Cooker over medium heat. Step 2 Add the oil and brown the pork. Step 3 Add the onion, garlic, ginger and capsicum and sauté for 2-3 minutes. Step 4 Drain the pineapple pieces, reserving the juice. Step 5 Mix the pineapple juice, soy sauce, rice wine vinegar and five spice in a jug. Add water if required to make 1 cup of liquid. Step 6 Add the pineapple pieces and liquid to the pressure cooker. Step 7 Close pressure cooker and bring to pressure (2). Step 8 Once at pressure reduce heat to low (maintain pressure) and cook for 15 minutes. Step 9 Remove from heat and allow pressure to release naturally. Step 10 Thicken sauce with corn flour if desired. Step 11 Serve with rice or noodles and steamed greens.
